Our Catering and Hospitality courses are ideal for those seeking to build on their existing skills and pursue a career in the growing Catering and Hospitality industry.

Whether you are looking to become a professional chef, work in restaurants, hotels, pubs, bars cafes or run your own restaurant, our range of courses will give you the skills, knowledge and experience to progress in this exciting sector.

You will have the opportunity to take part in external catering events and activities.

The topics studied on this course are:

  • Prepare, cook and serve stocks, soups and sauces
  • Prepare and cook fruit and vegetables
  • Prepare and cook meat and offal
  • Prepare and cook poultry
  • Prepare and cook fish and shellfish
  • Prepare and cook rice, pasta, grains and egg dishes
  • Produce hot and cold puddings and desserts
  • Produce paste products
  • Produce biscuits, cakes and sponges
  • Produce fermented dough products

To support the development of these skills, you will also undertake the following topics:

  • Food safety within the catering and hospitality industry
  • Health and safety within the catering and hospitality industry
  • Menu planning and business skills

How you will be assessed:

  • Paper-based examination
  • Assignments
  • Practical assessments

You may progress onto higher education courses and/or progress into careers including:

  • Restaurant Manager
  • Chef
  • Kitchen Manager
  • Bar Person
  • Baker
  • Confectioner
  • Barista

There may be an additional cost for a uniform and knife set.

You will also engage in the Positive Futures Careers Programme, developing key employability skills through a diverse range of activities including work placements, volunteering, employer talks, industry study visits and employment and university fairs.

For Level 2 Professional Cookery: 4 GCSEs at grade 9-4 (including Maths and English Language) OR GCSE 9-4 in Maths & English Language plus a Pass on the Introduction to Professional Cookery Course.
